Sweet summertime freeze pops


Forget New Year’s resolutions. In January, when the weather is cold, all I want to do is curl up with hot cocoa with fluffy marshmallows and eat cookies. Once it gets warm again in the summer is when I start thinking about eating healthy again. Nature plays a big role in that, with hot weather there’s no impulse to put on warming fat, plus all those tasty AND healthy fruits and veggies are fresh.

One of the switches I make is with dessert. We don’t have a dessert every night, but a couple times a week, you just want something sweet while binging on the latest series. (The husband and I just finished “Mozart in the Jungle” on Amazon and “Sherlock” on Netflix.)

These freeze pops fit the bill – perfectly sweet without any added sugar. They are made with just three ingredients and have a taste my husband loves.

Strawberry-Kiwi Freeze Pops

1/2 pound strawberries, leaves removed, cubed

1 cup coconut water

3 medium-sized kiwi, peel, cubed

Steps

  1. Put ingredients in blender and pulse until smooth
  2. Fill freeze-pop mold, or paper cups with popsicle sticks, with mixPopsMold
  3. Freeze for several hours until solid

So easy. So delicious.
