I think I’ve been on a lemon kick lately. I seem to be adding it to a lot of stuff.
For Gram’s birthday, I needed a sugar-free dessert option. I picked up Pillsbury’s sugar free yellow cake mix, sugar-free Cool Whip, a lemon and raspberries.
I prepared the cake as the box’s instructions and poured into 9-inch rounds. Before baking, I zested lemon over the the cakes and baked.
I mixed about a 1/4 cup of lemon juice with the cool whip.
Once the cakes, were cooled, I frosted them with the lemon Cool Whip. Then I decorated with raspberries.
It was pretty good.
