This Christmas Eve, it was just going to be my boyfriend and I for dinner. No crazy parties or huge family gatherings. But I still wanted to make a full Christmas dinner — which I did (menu: roasted chicken, green beans with cranberries and almonds, candied carrots and homemade oatmeal bread).
For dessert, I wanted to do a cheesecake. Pie or log cakes are usually my Christmas go-to and we had soooooo many Christmas cookies, I wanted something different.
I made Nestle’s recipe for No-Bake Chocolate Cheesecake Pie. I didn’t have a chocolate bar like they called for, so I weighed out 8 oz of semi-sweet chocolate chips on my postage scale. It worked, don’t judge 😛
I created my own holiday-themed topping. On the stove, I combined thawed frozen strawberries with the cranberries leftover from what I didn’t use with the green beans and a splash of water and 2 tablespoons of honey. I let that simmer for a good while until the liquid was syrupy and then I let it cool.
I served the chilled cheesecake with a portion of the berries, some sliced almonds, a sprinkling of more chocolate chips and whipped cream.
Note: The cranberries are still pretty tart as this point, but the chocolate cheesecake and bits help to temper it. You may opt to add more honey or some sugar to your preference.
