This is another simple recipe that can be used to serve two.
One chicken breast, cut into strips (I used leftovers from my stuffed mushrooms)
Whole Kernel Corn
1) I let the chicken marinade overnight in spices, lemon juice and honey.
2) In a frying pan on medium heat, cook the chicken with a little olive oil in the pan.
3) Add half a can of whole kernel corn and about a cup of green beans cut into 1-inch chunks. Fry until cooked through, about 10 minutes.
4) Serve over a bed of rice, couscous or quinoa.
